Serves 4 – 6 people


4 lamb shanks, bone in

6 green korean peppers or anaheim peppers

1 small head of garlic, skin peeled/smashed off of each clove

26 oz chopped tomatoes with juice

1 green apple or pear

1 tablespoon whole black peppercorns

1 teaspoon paprika

2 teaspoons salt


Preheat oven to 350 degrees. Place all ingredients into an earthenware, oven safe pot. Bake for 3 hours, low and slow until meat easily comes off the bone.
